Ingredients

  • 2 tbsp. olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 lb. boneless, skinless chicken breast, cubed
  • 2 tsp. Castle Foods' chili powder dark & mild blend
  • 1 tsp. Castle Foods' cumin seed whole
  • 1/2 tsp. Castle Foods' cayenne pepper ground
  • 1 can (14.5 oz.) diced tomatoes
  • 1 can (15 oz.) kidney beans, drained and rinsed
  • 1 can (15 oz.) black beans, drained and rinsed
  • Salt and black pepper to taste
  • Shredded cheddar cheese (optional)

Instructions

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add chopped onion and garlic and cook until softened, about 5 minutes.
  • Add cubed chicken and cook until browned on all sides, about 8 minutes.
  • Add chili powder, cumin seed, and cayenne pepper and stir to combine.
  • Add diced tomatoes, kidney beans, and black beans, and stir to combine.
  • Bring the mixture to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally.
  • Season with salt and black pepper to taste.
  • Serve with shredded cheddar cheese if desired.
